This project is the first of several for a client located in Chapel Hill, N.C. and in Los Angeles. The scope of the architect’s work was to provide components—counter, merchandizing units, menu boards, lighting, finishes, colors, etc.—that define a store identity and could be replicated and modified for other locations.

The program required developing the prototypical elements of the space and adapting them to the varying spatial character of different locations. Research on materials was conducted to assure their substantiality and ability to be modularized. The feel of the space needed to convey a casual, refreshing attitude with an even balance of coolness and warmth, rather than a regional response specific to location. The client had hoped for a consistent identity, as identifiable as a chain store. The color scheme is loosely based on the product and equatorial region where most of the fruit used in the juice bar originates: mango, lime, banana. The space blends stainless steel and natural aluminum with natural and aniline-dyed wood.

The restaurant called for a serving and counter area, small seating area, merchandizing (shelving) units, preparation area (visible to the customer), clean-up, freezer and dry storage, toilets, and office. The client consisted of three strong-willed people, who desired a swift and inexpensive solution to the project, while trying to achieve the look of a successful national model with a substantial budget. The first store shown here was completed for $75 per square foot, after much of the original design was cut from the project.
