One of two restaurants in the Oberoi Hotel, Three Sixty immerses guests in the cooking experience. Virgile and Stone Associates sought to create an all-day dining restaurant that would challenge preconceptions of hotel catering, providing a protean space that can accommodate different kinds of cuisine and adapt its ambience from breakfast to dinner. A generous space envelope presented enormous design opportunities.
Enclosed in a frameless glass box, the restaurant’s kitchen becomes a stage for what the architect describes as the “theater of cooking,” allowing guests to watch the chefs at work or watch flames lick the sides of a traditional tandoori oven that is housed in a modern metal sculptural form. The variety of activities and varying cuisine, from the restaurant’s Enoteca Bar to its sushi counter, creates intrigue and a sense of excitement for guests as they enter the main space of the restaurant.
Backlit, colored glass panels form a striking background for the kitchen area. Grey-green slate covering the walls, dark timber floors, and brown tan leather upholstered chairs create a sophisticated yet friendly ambience. A sculptural light fixture, suspended above the main dining area, serves as a focal point for the space. Celebrating the surrounding gardens as much as possible, the architect seized every opportunity to maximize views of it through a glass perimeter wall.
